About the chef

Small on purpose.

Ten Tables is one chef cooking for the people of Northern Ireland, at their tables, for the moments that matter to them.

Why "Ten Tables"?

The name sets the scale. Ten Tables is small enough that the person who plans your menu is the person who cooks it, and every table gets the chef's full attention.

Restaurant kitchens are built for speed: the food leaves the pass and the cook never sees who eats it. Private cooking is the opposite. I meet the people I'm cooking for, I hear the speeches, and I see the plates come back clean. That's the job I wanted.

The cooking is seasonal and generous, rooted in Northern Irish produce and the dishes people here grew up with, done with a bit more care and a lighter touch.

What I care about

Three things I won't compromise on

  1. Cooked, not assembled

Stocks, sauces, pastry and bread made from scratch. Where it matters, it's cooked on the day.

  2. Northern Irish produce

From lough and coast, farm and orchard, chosen for flavour and in season.

  3. One chef, start to finish

You'll deal with me from the first message to the last plate. No handovers.
